A good coffee bean alone doesn't make a good espresso. There are many pitfalls during preparation that can negatively affect the quality of an espresso preparation. Despite the correct degree of grinding and the right machine settings, you're often fighting with the subjects of an uneven coffee puck or channelling, that's to say unsatisfactory coffee puck preparation. The correct tamping is an essential part of a perfect espresso recipe. Thanks to the continuously adjustable working depth of the plate, given the same amount of coffee, our Scarlet Espresso Flat Tamper reproduces the same result shot for shot. The tamper is set so that at the thicker, coloured end of the tamper rests on top of the sieve, so that the ground coffee is not compacted too densely and the coffee puck comes out perfectly straight. The biggest danger when using a regular tamper is that the coffee puck is compacted unevenly and the water only runs through the flat area during extraction because that's where there's least resistance, and so the flavours don't develop correctly from the ground coffee. Typically, the flow rate will no longer be correct, the espresso will flow too fast or too slow, and the espresso will taste sour or bitter.
